In addition to working on articles and wrapping up my teaching job where I’ve worked since ’04, I’ve been planning an engagement party with friends for a party of. . .30? I think? this coming Saturday. Here’s the menu:

margaritas-spicy pepitas-cheese dip from La Lomita-guacamole-salsa verdesalsa fresca-salsa picante-crema espesapickled red onions-carnitas tacos-flank steak fajitas-spicy quinoa with corn, cilantro, lime and jalepeno-black bean salad (no hominy, no green or yellow peppers)-molasses gingerbread with dulce de leche

Any advice for margaritas, missing menu items, timing, or otherwise, please advise. (:

    Been playing with non-traditional margaritas this week. Take some not-expensive tequila, throw in a diced fresh habenero and infuse for a few hours; strain. Whirl seedless watermelon in blender; strain; use juice as base for margarita. Mix with either all-habenero tequila or ratio of habenero/plain, depending on taste, some lime juice, and triple sec. Chill with ice and serve. If I recall, my proportions were 8 oz watermelon juice, 4 oz tequila, 2 oz triple sec, 2 oz lime juice, but proportions subject to taste.

    These both sound delicious! An excuse for margaritas again this week.
